Berry Brownie Pizza

Heat oven to 350 degrees Fahrenheit.  

In a medium bowl, combine 1 cup plus 2 tablespoons all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.  

In a medium saucepan, combine and melt 1 2/3 cups granulated sugar, 

6 tablespoons butter, and 1 1/2 tablespoons water.  Stir constantly and bring to a boil over medium heat.  Boil 1 minute then remove from heat.  

Stir in and melt 3 to 3.5 ounces unsweetened chocolate.  Cool briefly.  Beat in 1 large egg and 1 teaspoon vanilla.  Add flour mixture and stir well.  Stir batter onto parchment-lined cookie sheet or pizza stone; gently pressing outward into a 1/2-inch thickness.  Bake 15 to 20 minutes or until set.  Cool on a wire rack.

Beat together 4 ounces softened cream cheese, 4 tablespoons softened butter, 1 teaspoon vanilla, 
and 2 1/4 cups powdered sugar until smooth.


  When crust has been completely cooled, spread frosting onto brownie; leave a ridge like you would for a typical pizza.


Over cream cheese frosting, add quartered strawberries, 

blueberries, and raspberries.  Sprinkle the top with sifted powdered sugar.
