Get it ready– It’s easy. Outcome?– stupendous. This is festive, perfect for the cold weather, meeting and greeting friends– just cook your duck.
On a bed of thick sliced red onion, add 1 cup baked ham broth– grease skimmed off the cold broth. Lay the duck roast; then over the roast, orange marmalade, thinly sliced red onion, hot and spicy cajun seasoning, kosher salt, dry white wine, cardamom, sprigs of rosemary, and 2 thick slices smoked bacon. Slow-cook on high setting for 1 hour; turn down to low setting for the next 2 to 3 hours.
Save the duck broth for adding to casseroles, dressing or stuffing– other sources of cooking, delicious to the heart.
