Bacon and Pecan Brownies

Bacon and Pecan Brownies 
~ adapted from Symon’s Suppers ~

Preheat oven to 350ºF.  Butter a 9×9-inch baking pan.

Whisk together 2 cups granulated sugar and 4 large eggs.  Add 1 cup melted unsalted butter, 1/2 cup unsweetened cocoa powder, and 1 tablespoon vanilla bourbon extract.  If you have just regular vanilla extract, add straight-up bourbon– 1/2 to 1 teaspoon.

Add 1/2 teaspoon salt.

Add 4 1/2 ounces semi-sweet chocolate and 2 1/2 ounces bittersweet chocolate– chips or chopped.

Finally stir into the batter 1/3 cup chopped pecans.  Don’t forget to stir in the bacon pieces.  Bake fudgy, moist but not wet, for 25 to 30 minutes.
