Chewy Molasses Chocolate Chip Cookies

 ~ adapted from Joy the Baker ~
 Melt 2 sticks unsalted butter in a small heavy pan to prevent burning.
 Sift together 2 cups plus 2 tablespoons bread flour, 
 1 teaspoon kosher salt,
 and 1 teaspoon baking soda.
 Mix 1 1/2 cups granulated sugar 
 and 1/4 cup plus 1 teaspoon dark (unsulphured) molasses.  Incorporate until there are no large lumps. Pour in melted butter.  Cream altogether on medium speed for 3 minutes.  Add 1 large egg plus 1 yolk, and 1 1/2 teaspoons vanilla extract.  Slowly mix in the flour mixture.  
 Then stir in 2 cups chocolate chips.  I stirred in dark chocolate, first, then semi-sweet, then…
 Bake on parchment paper on cookie sheet or bar pan in a 350 degree oven for 8-10 minutes, just under-baking.  Slightly cool on a rack for 2 minutes, then remove parchment paper of cookies onto the rack.  These will set up more, being just right in texture.
