Liquid-Smoked and Broiled Ribeye Potatoes

Liquid-Smoked Broiled Ribeye Potatoes

This isn’t so much a ‘recipe’ as it is an idea.  But it leaves you with terrific flavor from a good ribeye steak, the potatoes broiled in the juices of ribeyes.  But eat the steaks first!– You’ll need time to broil the potato bites.  This is nice for an evening when you’ve had a rush of a day, don’t feel like setting a table or even being semi-formal, and you just want something that tastes like it’s been chored over but with little care and preparation.

Marinate ribeyes in Hickory Liquid Smoke, salt and pepper– broil onto parchment paper on a rimmed baking sheet. 

Turn halfway and broil to desired doneness.  Peel and cut into pieces several baking potatoes.  

Place potatoes into liquid from the smokey seasoning and ribeye juice.

(Helps to carefully pull up on each side of the parchment to coat potatoes in the liquid; this way, you’re not apt to tear the parchment paper with a utensil.)  Salt and pepper, place in the broiler and cook 10 minutes, turning the potatoes over, cooking every 10 minutes until tender and crispy.
