Chocolate Guinness Cake ~

Preheat oven to 350 degrees. Butter the sides and bottom of a springform pan, line the bottom with parchment paper and butter the paper.
On medium-low heat, melt 10 tablespoons unsalted butter and 1 cup Guinness stout. Remove from heat as soon as butter melts.
Whisk in 2 cups superfine sugar (You can process regular sugar for superfine.)
In a small bowl, combine 3/8 cups sour cream, 2 large eggs and 1 tablespoon vanilla; whisk, then whisk into chocolate mixture.
In a separate bowl, combine 2 cups all-purpose flour and 2 1/2 teaspoons baking soda; blend into cake batter.
Cool completely in the pan on a rack.
Beat 8 ounces cream cheese, 1 1/4 cups sifted confectioners’ sugar and 1/2 cup heavy cream for the topping.
