Colby Stuffed Jalapeno Beef Burger w/Panko Fried Beets

Memorial Day weekend– a time to grill out, the entire weekend, camping out or relaxing with friends or family by the pool or just being together on the patio out back…
Colby Stuffed Jalapeno Beef Burgers w/Panko Fried Beets ~
~ Skirt in the Kitchen ~
Use Montreal Steak seasoning to work in with beef, fingering it to combine well–
…  slice of Colby, placed on each patty before frying or grilling…
Cheese becomes invisibly tucked in the middle of each patty…
Cook well-done with Colby cheese in the centers.
Serve warm on any kind of bread–
…  with sliced jalapenos…
your choice of mustard whether it be Dijon, spicy mustard, sharp or plain…  a little ketchup doesn’t hurt…
Panko Fried Beets ~
~ Skirt in the Kitchen ~
Peel beets, rinse…
Slice evenly, whole-sliced or halved…
Dip each wedge or whole beet slice into flour (1/2 cup), then into egg mixture of (2) with 1 tablespoon buttermilk whisked into egg (add hot sauce and chopped basil into egg batter); lastly, into panko crumbs of 2 3/4 cup.  Coat and shake off excess amount, fry…
These are meant to be slightly crisp on the inside; put in warm oven set at 250 degrees F until you are finished frying all the beet slices.  Salt and pepper, well.
