Parsley-Tomato Pasta ~

Fry 3 slices of applewood smoked bacon. Drain bacon from skillet, and pour out part of the grease, keeping a little or 1/4…
Chop 1/2 or 3/4 of an onion to saute in bacon grease.
Keeping onion bits in the skillet, scrape bottom of skillet while 1/2 cup of dark beer poured in lifts bacon seasoning from bottom… Put crumbled bacon back in, turn skillet down on low heat.
Chop parsley, significant amount to add with–
28-oz. can of Italian plum tomatoes…
Add other seasonings of basil and oregano, salt & pepper– stir; turn up heat to medium.
Now pour in 1/2 cup chicken stock and 1 cup whole milk…
and sliced mushrooms,
1 1/2 cups grated Parmesan cheese,
and sliced Kalamata olives–
Bring up the sauce to a boil, stir well, turn down heat to simmer on the stove. Don’t let it cook down too much. Add your favorite pasta.
