(Use fingerling potatoes for this, just so it cooks on time; besides, these are very flavorful with nice texture, soaking up all the seasonings and juices from the sausage. An assortment of fingerlings cut in halves gives this dish remarkable color of purple as well as yellow; and the fingerling potato-size and style of this kind of potato give it character– an appealing reason to cook this dish, not only for the taste of the meal but for the sheer enjoyment of cooking.)
In a skillet, drizzle olive oil over sliced potatoes, pearl onions halved, chopped garlic; add herbs of thyme, basil and flat-leaf parsley; and 1 tablespoon salted butter. Salt and pepper…
Chop half of a small head of cabbage; add.
Now add cumin seeds and mustard seeds. These will soften as the meal cooks.
Cut mushrooms in halves, also add.
Next, cut cherry tomatoes into halves and add. Pour in a little bit of green chilies and dried red pepper flakes. Let this cook, covered, to tenderize the potatoes.
You will need to continually drizzle more olive oil; stir now and then. This will make its own sauce.
